Recipe: Not Your Traditional Gazpacho

I’ve been a fan of fruit and vegetable-like-fruit combinations ever since I tried Kim Barnouin’s Watermelon and Heirloom Tomato Salad, from her Ultimate Everyday Cookbook.

In that spirit, here are two non-traditional takes on gazpacho - the cooling summer “soup” that packs a lot of flavor just from the use of good, whole ingredients.

If you’re looking for a summery and refreshing soup I encourage you to give this one a try – the sweet flavor of the watermelon is balanced with the addition of tomatoes, cucumber and onion, making for a delicate and light soup.
