I, too, couldn’t believe it when I didn’t see potato, soy milk, or some other kind of “creamy” ingredient in this soup. It calls for six ingredients, primarily cauliflower, and a lot of water. Won’t this taste too much like, well…watery cauliflower?
But, there’s some sort of genius behind this one, promises Kristen Miglore, over at Food52:
With a little boiling and swirling in a blender, it completely dissolves into a soup that eats like a hug.
