Bittman on The Proper Way to Treat an Heirloom

I agree with Mark Bittman:

Two givens: Salt and pepper and good tomatoes. Good enough to eat with nothing on them, even if you wind up doing more.

But when you see his stunning display of twelve tomato-based dishes (broken down into salads, soups, stuffed, and salsas), you’ll be inspired to do more.
