Alicia Silverstone’s Quick Date-Apple-Cinnamon Oatmeal

I’ve always been a breakfast person.

Not that it has to be anything more than a bagel or oatmeal, but I’ve never been someone who could skip it. (Seriously - if I don’t eat within 45 minutes of waking up, I will start to develop a headache. My husband used to jokingly wonder if he should put a box of cereal on my nightstand so that I could start eating upon waking up.)

Having just started grad school, breakfast is even more important to me. Because, I am like a small child in this respect - if I’m hungry, I’m cranky, and if I’m cranky, I’m not paying attention to all the stuff that I’m spending all of this money to learn.

So, I need a breakfast that keeps me full. Which, I’ve discovered in steel cut oats. I usually eat them with maple syrup, cinnamon, raisins and either slivered almonds or walnuts. It’s hearty, easy on my stomach, and once I have a bowl around 7 am, I don’t need to think about eating again until noon.

But, I could use some variety in my flavors, which is why I was excited to find Alicia Silverstone’s recipe (from her book, The Kind Diet), for Date-Apple-Cinnamon Oatmeal on her blog last week.

With walnuts, fresh apples, dates, maple syrup, cinnamon, salt, and a dash of flaxseed oil, it sounds like a combo I’d even want to mix up and spread on toast or pancakes. It is something I’ll try this week.
